
Moringa Leaf Ice Cream Developed by UMI Makassar Lecturers
Moringa leaf ice cream was developed through the commitment of a leading lecturer at the Faculty of Economics and Business, Indonesian Muslim University (FEB UMI), located in Pucak Village, Tompo Bulu District, Maros Regency.
Ice cream is classified as a semi-solid food produced by the process of freezing a mixture consisting of flour, milk, animal or vegetable fat, sugar, or other permitted food ingredients. It is also defined as a frozen delicacy derived from dairy products, such as cream or similar substances, combined with flavorings and stabilizers, or produced through a simultaneous freezing process.
Pucak Village, located in Tompobulu District, is recognized as one of the villages in Maros Regency with significant Moringa cultivation potential, receiving great attention from the FEB Faculty of Economics and Business Team at the Indonesian Muslim University, UMI Makassar.
The FEB UMI Makassar team has directed its focus to community service initiatives by conducting training sessions related to the innovative production of nutrient-rich Moringa leaf ice cream, which aims to increase the income of partner groups in Pucak Village, Tompo Bulu District, Maros Regency.
Team Leader, Prof. Dr. Aryati, SE, MSi, articulated that Moringa leaves, apart from functioning as a vegetable component, offer health benefits due to their rich content of various vitamins and minerals. The IBM program that Prof. wants to develop. Aryati clearly covers making Moringa leaf ice cream as a delicious snack option, the ingredients are easily accessible.
However, it was proven that Prof. Aryati, SE, MSi, accompanied by Prof. Dr. Serlin Serang, SE, MS, faced challenges in producing Moringa leaf ice cream due to limited understanding of the local community, including a lack of equipment needed to prepare Moringa leaf ice cream.
Prof. Dr. Aryati, SE, MSi, further explained that the assessment of the challenges faced by the partner group shows the need for knowledge, skills and technological competence regarding appropriate technology that is easy to implement in society.
Production of this product can be carried out using simple technology, thus facilitating its development; as a result, the partner group must acquire knowledge and proficiency in moringa leaf ice cream manufacturing, packaging methodology, bookkeeping, financial analysis, and marketing strategies, enabling the partner group to add to its economic value, which will ultimately lead to increased group revenue.
