
Utilization of Peanuts for Production of Healthy, Nutritious Chocolate Peanut Butter
A team of lecturers from the Faculty of Pharmacy, Indonesian Muslim University (UMI) Makassar in collaboration with the Community Service Institute (LPkM) carried out community service activities aimed at providing training on the use of food products from UMI-assisted villages.
The activity partners are PKK women and housewives in Borisallo Village, Parangloe District, Gowa Regency on October 5 2024.
As one of the areas that cultivates peanuts, the service team aims to optimize the potential of this area. So far, peanuts are only sold in raw form and some are processed into snacks. Through this service, peanuts are processed into additional food in the form of chocolate peanut butter which is very rich in nutrients so it is very good for health. The fat content of peanuts is unsaturated fat (not cholesterol) which is good for health. The sugar content is low and the fiber is good for digestion. Contains vitamins E, A, K and B-complex as well as high levels of Ca, K minerals and also contains Fe, F, Na, Cu, Mg, Mn, Se, Zn. Peanuts also contain phytosterols in the form of (betasitosterol, campesterol and stigmasterol) which can inhibit the absorption of cholesterol from food.
In this millennial era, apart from being used to spread chocolate peanut butter on bread, it is also used as a topping for food, biscuits and cakes. Its high and varied nutritional content is very good for consumption by children and the elderly. This chocolate peanut butter has a delicious and savory taste with a semi-solid texture so it is suitable as a spread, dip and food topping.
