Utilization of Crab Shell Waste: Chitin/Chitosan (Crab) Shell Extract as an Alternative Synthetic Food Preservative Highlighting Aspects of Waste Utilization and Natural Alternatives in Salassae Village, Kec. Bulukmpa, Bulukumba Regency

Bulukumba, South Sulawesi โ€“ Community service team led by Chairman Dr. Taupan, SE., M.M with members Dr. Imran Tajuddin, SE., M.Si; and Rasya Islami Dwi implemented an innovative program to utilize crab shell waste into chitin/chitosan extract as an alternative natural food preservative. This program takes place in Salassae Village, Bulukumpa District, Bulukumba Regency.

This activity aims to provide science-based solutions to the problem of marine waste which has not been utilized optimally. Through the extraction of chitin/chitosan from crab shells, people are introduced to simple technology but with high economic value, while supporting efforts to reduce dependence on synthetic chemical preservatives.

"Apart from reducing environmental pollution, the use of crab shell waste also opens up new economic opportunities for the community. Chitin and chitosan have many benefits, including as food preservatives that are more environmentally friendly and healthy," said Dr. Taupan when met on the sidelines of activities.

This program was welcomed positively by the people of Salassae Village. The training and outreach carried out included an introduction to the extraction process, simple testing of chitosan quality, and its use in local food products. The final result of the activity is expected to increase public knowledge about the importance of sustainable use of marine waste.

This service activity is also a real example of synergy between universities and the community in encouraging innovation based on local potential. The service team plans to provide ongoing assistance so that the application of chitin/chitosan extraction technology can continue to develop at the village level.

The program "Utilization of Crab Shell Waste: Chitin/Chitosan Extract as an Alternative Food Preservative" is one of the community service activities which is fully supported by the Indonesian Muslim University (UMI) Community Service Institute. This program is designed to increase public awareness of waste management and support the development of a creative economy based on local natural resources.
